After my comments about lamb, I got a request for the recipe, so, here are my favorite Iraq Recipes.


Khalidiyah Cinnamon Lamb

Go to the market about mid morning and pick out a lamb.  The lamb should be
alive when you buy it and will be butchered and ready for you to pick up in
the evening.  Cost $120 U.S. Dollars
1 Pound Cinnamon $5
1 Pound Black Pepper $5
1 Bottle Sunflower Oil
1 Pound Rice $5
Tinfoil
Charcoals

Pick up halal butchered lamb.  Trim to suit, season liberally with cinnamon
and black pepper.  Wrap in tinfoil and place in bed of medium coals for
20-30 minutes.

Wrap rice in foil with sunflower oil and lamb fat.  Place in coals for 10
minutes.

Serve with bottled water.


Morning Tea

Boil water over fire.  Add sugar, add more sugar, add some more sugar.
Bring tea pot to boil again.  Add black tea.  Bring to boil.  Let simmer for
5-10 minutes on low coals.  Serve with cigarettes.


Cinnamon Veggetarian Breakfast

1 pound potatoes
1 pound tomatoes
Sunflower oil
cinnamon
pepper

In a cast iron pan, fry veggies in oil, season to taste with cinnamon and
black pepper.  Serve with flat bread or use half an MRE bag as bowl.
